This is one of my favorite dishes. And today I finally made it just the way I like it. With lots of cooked veggies and capers and green olives.
It has been raining every night but by late morning the sun is usually out. Chico has been walking with me to the pool and waiting in the yard while I swim. He seems much healthier. I thought that his extra fat and slow movement was caused by old age. It was just lack of exercise! Same with me.....
We both are getting better. Now if I don't die of the virus, I may be buying myself a few extra years of this great life. I will never regret moving to Mexico.

ReplyDeleteGlad you are able to get out to a local pool. At my apartment complex they are just starting to open the pools up with limited hours and a limited number of people at any given time. Though in my Texas county in D/FW, the number of cases is really spiking upwards since re-opening started. Yet a good number of people have stopped wearing masks. I just stay away as best possible.

DeleteHi Ricardo, thanks for commenting. I don't have a recipe. I just wing it. I cook up whatever veggies I have and add in tomato sauce or v 8 juice and capers and green olives and then cook it over a white fish fillet. And rice. P
ReplyDeleteHealthy meal there! Please stay safe. Here in VA the Covid cases are stable, but I'm not letting my guard down. Mask in any store or anywhere near others. Did take a trip to a Potomac River "beach" yesterday. Nice to get out, but stayed away from others. Hugs to you, Chico, and Olive.

ReplyDeleteReading your blog is like meeting a longtime friend...even though we've never met! Things are not too bad in VA as far as Covid, although I certainly continue precautions. But I don't think I can go to FL this summer to help my stepmother. Don't want to get her sick (she had a stroke years ago), and don't want to bring it back here. It's ridiculous it's still so bad...
